The farmers in South Tyrol have always been self-sufficient. In the past, almost all the day-to-day food was produced on the farms themselves. Going to the village shop was an exception. The farm families have taken advantage of this and can draw on a wealth of experience when creating their farm products. Spicy smoked sausages, fruity jams, pickled vegetables, fine wines and creamy honey - the list of high-quality delicacies from the farm doesn't stop there. The products from the farm not only taste good, they are also completely natural. No farm in South Tyrol should be without a traditional farm garden. There is a real variety of berries, fruits and vegetables here. In the herb bed, all kinds of spices and medicinal plants exude their scents. Are you getting a taste for it? In the farm shop you can stock up on all sorts of delicacies that will enrich your holiday. Many products also find their way onto the breakfast plate every day. In fresh or refined form, the farmer brings what nature and the farm have to offer to the table.
More than just milk
The cows of South Tyrol's mountain farms are milked twice a day. Fresh milk is not only a popular drink, it is also used as a valuable resource. The production of different types of cheese is a fine art in milk processing. After adding cultures, the milk is heated and acquires a solid consistency. The raw cheese is taken out of the cauldron in a large cloth and pressed into a mould. Then it is turned over several times a day before it is placed on wooden boards in the cool cellar in order to achieve even maturity. When the time is right, you can taste aromatic cheese straight from the farm during your holiday in an apartment or room.
Full-bodied apple juice
Taste experiences are also not forgotten on the fruit farms in South Tyrol. The farmers tend and care for their apple trees all year round. In spring they protect the delicate blossoms from frost, in summer they protect the young apples from stormy weather. In autumn the time of the long-awaited harvest finally arrives. At just the right moment the ripe fruits are picked by hand and processed immediately. When making apple juice, every South Tyrolean fruit grower swears by their own secret recipe. Depending on the taste, Golden Delicious, Jonagold and other varieties are combined and pressed into a fruity juice. For a balanced sweetness it is crucial that the apples are just at the right stage of ripeness. The fresh taste of the apples is gently preserved in the bottle and provides a healthy thirst quencher for guests large and small on the farm.
