The combination of Alpine and Mediterranean climate shapes the landscape and has a considerable impact on farm cooking, too. The different levels of altitude in South Tyrol influence the cultivable areas and the range of produce, and its farmers have learnt the best ways to adapt to their locations. This means that a wide variety of fruit and vegetables is grown in South Tyrol. A few of the areas, such as Vinschgau, have proved to be the perfect spot for growing apricots, and the Etschtal valley attracts foodies in spring with its fresh asparagus. Whether down in the valleys or up in the mountains, all different types of farm garden produce healthy vegetarian dishes all year round that may be easily included in everyday meals with a bit of inspiration.
