The farm
The farmers at the Lehnerhof farm in the district of Deutschnofen/Nova Ponente have managed to revive a part of their rural tradition. Farm production and modern technology go hand in hand at the Learner cheese dairy. You can taste the delicious results yourself: high quality cheeses made from raw milk, carefully made by the farmers themselves.

Knowing where it's from
The cheese from the Lehrnerhof is made from 100% high-quality milk from our own production. The dairy cows of the Tyrolean gray cattle breed are fed with the farm's own basic feed and, in addition, with concentrated feed. The animals have access to the outside every day. The fact that they are doing well is reflected in the quality of the milk and thus also in the delicious taste of the cheeses.
Daily exercise contributes to the good health of the animals

Processing
The milk obtained is processed into raw milk cheese every other day. Thanks to the low fat content, the milk of the gray cattle breed does not have to be additionally skimmed. All ingredients are therefore preserved. A special feature is that Stefan Köhl produces the cheese cultures that are responsible for the milk curdling himself. This is how he achieves an unmistakable cheese style. To get an idea of how much manual work there is behind the cheese production at the Lehrnerhof, it is advisable to take a look at the cheese care. In total, the cheeses are handled a total of 70 to 80 times before they leave the maturing cellar.
