The farm
Grass and hay rich in herbs along with natural, species-appropriate cattle farming make up the ideal conditions for the production of the high quality milk that forms the basis for cheese production at the Neuhaus Hof farm. The family has specialized in cheese production for a number of years and offers customers various types of matured and offers hard cheese with herbs as well as soft cheese.

Processing
The farm's own milk is freshly processed at the Neuhaus Hof every day. The various raw milk cheeses mature in an underground cellar for between 5 weeks and 2 months. The rock or the mountain itself donates the natural moisture that is needed for successful cheese maturing.
The milk is thickened and then cut into curds
Each wheel is brushed several times by hand
Only untreated boards are used
