The focus is on dandelions during these annual culinary weeks.
The participating farms in the villages of Proveis, Unsere Liebe Frau im Walde and St. Felix are all focused on the dandelion, which was one of the first herbs to grow in the meadows of this remote area, to the east of the massive Ortler mountain group, and north west of the wine-spoilt Unterland area. Dandelions have been used in herbal medicine for centuries; they are reputed to purify the blood and stimulate the metabolism. This tasty spring herb is also used in the kitchen. Chefs will pamper their guests with dandelion soup, wholemeal risotto with dandelion and cream cheese or caramelised poppy seed pancake with dandelion honey and apple slices. There is also a rich supporting programme with farmers' markets and music festivals.
