Ravioli with Golden Delicious and speck
Apple speck ravioli
The South Tyrolean classics of apples and speck come together wonderfully in this dish.

Ingredients

- For the pasta dough

300 gwheat flour

3egg yolk

onion, finely chopped

apples (Golden Delicious)

finely diced speck

apple juice

apple vinegar

brandy

tsp
ginger
salt
freshly-ground pepper

egg yolk
parmesan
strips of speck
brown butter
dried apple chips
Instructions - Ravioli with Golden Delicious and speck

1.StepWork together all the ingredients for the dough on a pastry board to form a smooth dough. Cover and allow to rest for about 30 minutes.

2.StepPeel and finely dice the apples.

3.StepLightly sweat the bacon cubes with the chopped onion in a pan, add the apple cubes.

4.StepAdd the sugar, lightly caramelise and deglaze the pan with brandy.

5.StepThen add the ginger, apple juice and apple cider vinegar and simmer gently for about 5 minutes.

6.StepSeason to taste and allow to cool.

7.StepRoll out the dough thinly and cut out rounds. Brush half with the beaten egg, add a teaspoon of filling, cover with a second round and press down gently to seal. Cook in salted water for about 3 minutes.

8.StepGarnish the dumplings with strips of speck, parmesan, a little butter and apple chips.
