  • 125 g
    butter
  • 200 g
    honey
  • 3
    free-range eggs
  • 125 g
    low-fat curd cheese
  • zest of half in untreated lemon
  • 100 g
    sultanas
  • 50 g
    hazelnuts
  • 200 g
    spelt-wholewheat flour
  • 200 g
    spelt-white flour
  • 3 tsp
    baking powder
  • 125 ml
    milk

Instructions - Honey cake

    Step
    Beat butter with honey and eggs until fluffy.

    Add low-fat curd cheese, lemon zest, sultanas and the ground hazelnuts.

    Step
    Mix spelt-wholewheat flour and spelt-white flour with the baking powder and stir with the milk.

    Add the curd cheese mixture to the flour mixture and knead to a dough.

    Step
    Put dough in a buttered and floured loaf tin and bake at 175°C for around 50 minutes.
