This colourful stir-fry with pasta is a quick and easy-to-prepare dish for hungry bellies.

seasonal vegetables e.g. spring onions, aubergines, peppers, courgettes and cherry tomatoes; or leeks, broccoli, carrots, fennel and mushrooms.

alpine cheese, grated

Instructions - Mountain pasta with stir-fried vegetables

1.StepCook the mountain pasta in plenty of salted water for 7 minutes until al dente.

2.StepFry the vegetables in a hot wok with oil and garlic for 5 minutes, stirring constantly.

3.StepSeason with salt, pepper and chilli and sauté a little over a medium heat.

4.StepAdd the cooked mountain pasta to the vegetables, garnish with grated mountain cheese and parsley and serve.
