Ingredients

300 gpotatoes

500 gleeks

2 - 3cloves of garlic

oil

2 dspnbutter

2 lmeat stock
-
180 gwild herbs (Good-King-Henry, nettle, bear's garlic, sorrel)

salt, pepper

some whipped cream
Instructions - Wild herb soup

1.StepPeel the potatoes and dice finely. Halve the leek and chop into fine rings. Peel the garlic and chop finely. Heat the oil and butter in a pan and braise the garlic and leeks. Add the potatoes and likewise braise.

2.StepPour over the stock and leave to simmer for around 30 minutes.

3.StepBriefly blanch the wild herbs and add to the soup shortly before serving.

4.StepPuree in mixer, season with salt and pepper and finally serve with some whipped cream.
