Apple speck ravioli

The South Tyrolean classics of apples and speck come together wonderfully in this dish.

  • For the pasta dough
  • 300 g
    wheat flour
  • 3
    egg yolk
  • salt
  • olive oil
  • For the filling:
  • 1/2
    onion, finely chopped
  • 4
    apples (Golden Delicious)
  • 50 g
    finely diced speck
  • 150 ml
    apple juice
  • 50 ml
    apple vinegar
  • 100 g
    sugar
  • 1 splash
    brandy
  • 1 tsp
    ginger
  • salt
  • freshly-ground pepper
  • 1
    egg yolk
  • For the garnish:
  • parmesan
  • strips of speck
  • brown butter
  • dried apple chips

    Instructions - Ravioli with Golden Delicious and speck

      Step
      Work together all the ingredients for the dough on a pastry board to form a smooth dough. Cover and allow to rest for about 30 minutes.

      Peel and finely dice the apples.

      Lightly sweat the bacon cubes with the chopped onion in a pan, add the apple cubes.

      Add the sugar, lightly caramelise and deglaze the pan with brandy.

      Then add the ginger, apple juice and apple cider vinegar and simmer gently for about 5 minutes.

      Season to taste and allow to cool.

      Roll out the dough thinly and cut out rounds. Brush half with the beaten egg, add a teaspoon of filling, cover with a second round and press down gently to seal. Cook in salted water for about 3 minutes.

      Garnish the dumplings with strips of speck, parmesan, a little butter and apple chips.
