Shiitake mushroom pastry sheets

These mushrooms, originally from China and Japan, have made South Tyrol their home as well, and give the buckwheat pancakes a meaty flavour.

  • 400 g
    wheat flour
  • 200 g
    buckwheat flour
  • 3
    free-range eggs
  • 2 dspn
    semolina
  • 500 g
    shiitake mushrooms
  • 2 dspn
    olive oil
  • butter
  • salt and black pepper

Instructions - Buckwheat pastry sheets with grilled shiitake mushrooms

    Step
    Roll the dough out thinly and cut into sheets of dough. Boil these in salted water for around 2 minutes until al dente.

    Step
    In the meantime, grill the shiitake mushrooms (don't cut up) in olive oil. Then season with salt and pepper.

    Step
    Stir-fry the pastry sheets in melted butter and serve with the grilled shiitake mushrooms.

    Work flour, eggs and semolina into a smooth dough adding some lukewarm water.
