Farmer’s omelette
The farmer's version of omelette uses speck and onions.

Ingredients

3 - 4free-range eggs

2 dspnfresh cream

1 dspnclarified butter or butter

50 gspeck, cut into strips

100 gthickly grated cheese (Marienberger, Burgeiser Classic,…)

1 dspnchives

Instructions - Farmer’s omelette

1.StepWhisk together the eggs and cream, lightly season with salt and add half of the chives.

2.StepMelt clarified butter or butter in a non-stick pan and gently fry the speck.

3.StepPour the egg and cream mixture into the pan, cover and allow to cook for about 5 minutes on a medium heat - it should be golden brown on the underside and soft and creamy on top.

4.StepSpread the coarsely grated cheese over the omelette.

5.StepFold the omelette in half and cover again. After about 2 minutes serve on a plate and sprinkle with chives.
