Farmer’s omelette

The farmer's version of omelette uses speck and onions.

    free-range eggs
  • 2 dspn
    fresh cream
  • 1 dspn
    clarified butter or butter
  • 50 g
    speck, cut into strips
  • 100 g
    thickly grated cheese (Marienberger, Burgeiser Classic,…)
  • 1 dspn
    chives
  • salt

Instructions - Farmer’s omelette

    Step
    Whisk together the eggs and cream, lightly season with salt and add half of the chives.

    Melt clarified butter or butter in a non-stick pan and gently fry the speck.

    Step
    Pour the egg and cream mixture into the pan, cover and allow to cook for about 5 minutes on a medium heat - it should be golden brown on the underside and soft and creamy on top.

    Spread the coarsely grated cheese over the omelette.

    Step
    Fold the omelette in half and cover again. After about 2 minutes serve on a plate and sprinkle with chives.
