Boiled beef
The thinly sliced beef is an lovely light dish, especially good in summer.

Ingredients

1 kgbeef (shoulder)

1/2onion

50 gceleriac bulb

1carrot
-
1/2leek
-
4peppercorns
-
salt

1 kgpotatoe

1onion (cut into rings)

50 mlred wine vinegar
-
20 mlolive oil
Instructions - Boiled beef

StepBoil the beef for around 2 hours. -

StepChop the onion, celery, carrot and leek into pieces and add to the pot with the peppercorns. Season with salt and boil for another 45 minutes approximately. -

StepIn the meantime, peel the potatoes, quarter and boil separately in plenty of salted water for around 30 minutes. -
4.
StepTake the boiled meat out of the water, cut into thin slices and place on plates with the boiled potatoes. -
5.
StepLay onion rings on top of the meat and drizzle over vinegar and olive oil. -
