Finely chop onion and leek and brown until soft and opaque.

StepFinely chop onion and leek and brown until soft and opaque. -

StepAdd the peeled and diced potatoes, briefly fry, add salt and pepper, douse with white wine and pour vegetable or meat stock on top. -
3.
StepAdd the finely diced 'Graukäse' as soon as the potato is cooked. Briefly bring all ingredients to the boil and blend with cream. -
4.
StepPlace the soup in bowls with croutons, crumbled 'Graukäse' and chives and serve. -
