Muesli bars
A muesli bar made from honey, dried fruit, nuts and seeds makes an ideal refreshment on a mountain tour or a snack between meals.

Ingredients
makes 30 bars

550 groughly chopped walnuts, almonds, hazelnuts & cashew nuts
-
250 gporridge oats
-
100 gsultanas
-
100 gsesame, chia & pumpkin seeds
-
50 gwholemeal flour
-
250 gdried fruit (apricots, pears, damsons, dates, cranberries…)
-
a pinch of cinnamon
-
5free-range eggs
-
1honey
-
1 dspncoconut oil (optional)
Instructions - Muesli bars

StepCombine the nuts, oats, sultanas, seeds, flour, dried fruit and cinnamon well. -
2.
StepBeat the eggs with the honey until foamy and mix well with the nut mixture. -
3.
StepSpread the mixture over the baking tray lined with baking parchment and press it down. -
4.
StepBake at 180° C for approx. 20 minutes. -
5.
StepCut into bars while still warm and then allow to cool and store in a biscuit tin. -
