Spinach ‘spatzlen’
A very simple recipe for green Spatzlen that children and adults love and that taste especially good with fresh spinach.

120 graw spinach
-
1clove of garlic
-
3free-range eggs
-
300 - 400 mlmilk
-
200 gflour
-
salt
-
parmesan cheese
-
butter
-
a little grated nutmeg
Instructions - Spinach ‘spatzlen’

StepFirst blend the raw spinach with the garlic clove and then add the eggs, milk and a little nutmeg. -

StepSlowly stir in the flour and season with salt. Now stir with a wooden spoon until you have a smooth batter. -

StepNow push the spinach mixture through a spaetzle maker into boiling salted water and stir regularly. -
4.
StepBring the ‘spatzlen’ to the boil briefly until they float to the surface of the water and then serve with parmesan and butter. -
