Spinach ‘spatzlen’

A very simple recipe for green Spatzlen that children and adults love and that taste especially good with fresh spinach.

  • 120 g
    raw spinach
  • 1
    clove of garlic
  • 3
    free-range eggs
  • 300 - 400 ml
    milk
  • 200 g
    flour
  • salt
  • parmesan cheese
  • butter
  • a little grated nutmeg

Instructions - Spinach ‘spatzlen’

    Step
    First blend the raw spinach with the garlic clove and then add the eggs, milk and a little nutmeg.

    Step
    Slowly stir in the flour and season with salt. Now stir with a wooden spoon until you have a smooth batter.

    Step
    Now push the spinach mixture through a spaetzle maker into boiling salted water and stir regularly.

    Step
    Bring the ‘spatzlen’ to the boil briefly until they float to the surface of the water and then serve with parmesan and butter.
