Swiss roll
Quick and easy to make. Filled with good jam, this cake is the perfect accompaniment to a cup of coffee.

Ingredients
Makes 1 roulade

6egg yolks

100 gsugar

6 dspnhot water

vanilla, lemon zest

6egg whites

1 Pinchsalt

100 gflour
-
30 gpotato flour
-
250 gcream
-
fresh berries or jam
-
1 Pinchsugar to taste

a little lemon juice
Instructions - Swiss roll

StepPre-heat the oven to 200° C fan. -

StepBeat the egg yolks, 50 g sugar, vanilla and lemon until creamy. -

StepThen beat the egg whites with the rest of the sugar to stiff peaks. -
4.
StepBeat in a little of the egg white to the egg yolk mixture. Then carefully fold in the rest. -

StepFinally gently fold in the sifted flour / potato flour mixture. -

StepSpread evenly on the baking sheet and bake in the preheated oven for about 10 minutes - until the surface is golden. -

StepAllow the sponge to cool. -

StepWhip the cream. -

StepIf you like, season the fresh berries with a little sugar and lemon juice. -

StepSpread the whipped cream evenly over the cooled sponge, top with the berries and roll up. -

StepDust with icing sugar and enjoy! -

StepTip: In winter, when there are no fresh berries in the garden, simply spread some jam made from summer berries over the sponge. Equally tasty! -
