Homemade Schüttelbrot tagliatelle, served with a delicate sauce made from traditional grey cheese makes for an exciting dish.

  • For the pasta dough:
  • 100 g
    finely ground
  • 200 g
    flour
  • 3
    free-range eggs
  • a little olive oil
  • salt
  • For the 'Graukäse' sauce:
  • 250 ml
    beef stock
  • 1 dspn
    butter
  • 200 g
    chives

    Instructions - Tagliatelle with 'Graukäse' sauce

      Step
      Form a dough from the ingredients and set aside for around 30 minutes.

      Roll dough out thinly with a pasta maker and cut into strips.

      Boil in plenty of salted water.

      In the meantime, reduce the stock and garnish with butter, chives and a little 'Graukäse'.
