Ingredients

100 gbiscuits (e.g. cereal or butter biscuits)

40 gbutter

1 dspnvanilla sugar

500 gapple puree

150 gcottage cheese
-
50 gmascarpone

2 dspnsugar

100 gcream
mint or caramelised walnuts to garnish
Instructions - Apple purée cheesecake

1.StepTo make the base, finely crumble the biscuits, then mix the melted butter and vanilla sugar in with the biscuit crumbs.

2.StepDistribute the mixture in 4 glasses, fill with the cold apple purée and smooth over the top.

3.StepTo make the mousse, beat and froth the cottage cheese with the mascarpone and sugar. Beat the cream until stiff and fold into the cream cheese mousse mixture.

4.StepPipe the mousse into the apple purée with a piping bag.

5.StepGarnish with mint or caramelised walnuts.

6.StepDepending on your preference, the jars can be chilled in the fridge or eaten straight away.
