2 dspnwild flower honey

juice of a lemon

180 gfresh goat's cheese

1small onion

1 dspnolive oil

50 gwalnuts

1 tsplemon juice

herb salt
-
pepper

4slices of 'Speck' rolled into roses

Instructions - Marinaded 'apples' on goat's cheese pralines

StepCut the apple into slices of 1 cm thickness. -
2.
StepStir the honey with the lemon juice and thyme to make a marinade, pour onto apple slices and leave overnight. -
3.
StepLeave fresh goat's cheese to drain overnight in a sieve. -
4.
StepFinely chop the onion, sauté in olive oil and leave to cool. Combine with the chopped nuts and mix into goat's cheese, seasoning with lemon juice, herb salt and pepper. -

StepShape 4 'pralines' from the mixture, place each one on a slice of apple and garnish with 'Speck' roses and marinade. -
