Apple strudel
In South Tyrol apple strudel is traditionally made with shortcrust pastry and local apples. It’s perfect with a cup of coffee.

Ingredients
2 strudel

- For the shortcrust pastry:

10 - 12 gapples

1 Sachetbaking powder

4free-range eggs
-
180 gsultanas
-
200 grum (to taste)

1 Packetvanilla sugar

sugar
-
vanilla sugar
milk for brushing
Instructions - Apple strudel

StepKnead the flour, baking powder, eggs, margarine, sugar and vanilla sugar to form a smooth dough. Set aside for around ½ hour. -

StepPeel the apples for the filling, cut into small pieces and mix with the sugar, vanilla sugar and sultanas. Add rum to taste. -

StepFinally, cut the dough into 2 pieces, roll out and add filling. Then brush the strudel with cold milk. Bake in oven at 180 °C for around 45 minutes. -

StepSprinkle the still-warm strudel with icing sugar and serve with custard, if desired. -
