Beef with herb sauce
Beef is also a treat when boiled. To keep the meat tender, only allow the broth to simmer gently.

1celeriac bulb

free-range eggs, hard-boiled
olive oil
fruit vinegar

Instructions - Beef with herb sauce

StepBriefly fry the onion in the butter, this gives a nice toasted flavour to the meat broth. -

StepThen add water and bring it to the boil. Salt the boiling water, then add the meat and vegetables. The meat should be completely submerged in the water. -

StepSimmer on a low heat for about 1-2 hours. -

StepThinly slice the beef and serve with boiled potatoes, root vegetables and the green herb sauce. -

StepFinely chop the parsley, herbs, eggs, garlic and gherkins. -
6.
StepMix with olive oil and vinegar and season with salt and pepper. -
