Beef with herb sauce
Beef is also a treat when boiled. To keep the meat tender, only allow the broth to simmer gently.

free-range eggs, hard-boiled
olive oil
fruit vinegar

Instructions - Beef with herb sauce

1.StepBriefly fry the onion in the butter, this gives a nice toasted flavour to the meat broth.

2.StepThen add water and bring it to the boil. Salt the boiling water, then add the meat and vegetables. The meat should be completely submerged in the water.

3.StepSimmer on a low heat for about 1-2 hours.

4.StepThinly slice the beef and serve with boiled potatoes, root vegetables and the green herb sauce.

5.StepFinely chop the parsley, herbs, eggs, garlic and gherkins.

6.StepMix with olive oil and vinegar and season with salt and pepper.
