Pickled courgettes

Ingredients

1 kgcourgettes

500 gonion

250 gsugar
-
250 mlvinegar

1red bell pepper (finely diced)

1 tsppepper

1 tspcurry powder
-
1 tsppaprika
-
1 Pinchsalt
-
250 mlwater
-
2cloves of garlic
Instructions - Pickled courgettes

1.StepCut the courgettes and onions into thin slices.

2.StepPrepare stock from the sugar, vinegar, diced paprika, salt, water and garlic clove.

3.StepAfter boiling, leave to stew for 10 minutes.

4.StepThen pour the hot stock into jars with screwtop lids and turn upside down until all contents are cool.
