Potato fritters with cabbage
In this superb farmer's dish from the Pustertal Valley, sauerkraut is combined with a fried potato dough.

Ingredients

600 gfloury potatoes

2egg yolk
-
2 dspnmelted butter
-
400 gflour
-
1 Pinchsalt

oil for frying

500 gcooked sauerkraut
Instructions - Potato fritters with cabbage

1.StepBoil and mash potatoes and allow to cool.

2.StepKnead egg yolk, melted butter, flour and salt to a dough.

3.StepRoll out dough until around 2mm thick, cut out round sheets and lay on a cloth. Fry dough sheets in hot oil until golden brown.

4.StepDrain well on kitchen paper and serve hot with sauerkraut.
