Summer salad with 'Speck'
Often the simplest dishes are the best. Good ingredients are important, in this case fresh lettuce from the garden and the best quality speck.

60 g'Speck' (cut lengthways)

1fresh lettuce

2free-range egg (boiled)

walnuts (caramelised in honey)
salt, pepper
balsamic vinegar
olive oil
a little honey
some horseradish sauce and chives
heads of elderflower
Instructions - Summer salad with 'Speck'

1.StepTurn the bacon in a hot pan until slightly crispy. Leave to cool on kitchen paper.

2.StepArrange the lettuce leaves, the egg and the walnuts on a salad plate and sprinkle the bacon on top.

3.StepCombine the ingredients for the salad dressing well and drizzle over the fresh salad. Garnish with horseradish, chives and elderflower blossom, if desired.
