    'Speck' (cut lengthways)
  • 1
    fresh lettuce
  • 2
    free-range egg (boiled)
  • walnuts (caramelised in honey)
  • For the salad dressing:
  • salt, pepper
  • balsamic vinegar
  • olive oil
  • a little honey
  • To garnish:
  • some horseradish sauce and chives
  • heads of elderflower

    Instructions - Summer salad with 'Speck'

      Step
      Turn the bacon in a hot pan until slightly crispy. Leave to cool on kitchen paper.

      Arrange the lettuce leaves, the egg and the walnuts on a salad plate and sprinkle the bacon on top.
