Wine soup

Wine soups have purportedly been around since Roman times, used to strengthen the sick. This popular soup is traditionally made with white wine.
Ingredients

  • diced stale bread
  • 1 dspn
    butter
  • a little cinnamon
  • 500 ml
    strong meat stock
  • 5
    egg yolks
  • 250 ml
    cream
  • 250 ml
    Chardonnay

Instructions - Wine soup

    Toast the diced bread in butter and sprinkle with cinnamon.

    Whisk together the hot stock, egg yolks, cream and white wine over a low heat until nice and creamy.
