Potatoes from the field, spinach from the garden and delicious mushrooms: a nice recipe to enjoy on special occasions.

- For the cams:

500 gpotatoes

200 gspinach

2 dspnbutter
-
1 1/2 tspnutmeg

2free-range egg yolks

2 dspnparmesan cheese

a little flour
300 - 500
g
king oyster mushrooms
olive oil
salt
a little white wine
a little cream
parsley
pepper
Instructions - Green potato dumplings with king oyster mushroom

1.StepPeel and chop the potatoes and boil them in salted water. Throw in the spinach towards the end and cook briefly with the potatoes. Drain, mash using a potato ricer and allow to cook.

2.StepWork the butter, nutmeg, egg yolks and parmesan into the potatoes to form a dough.

3.StepAdd enough flour to make a medium firm dough.

4.StepForm little dumplings from the dough and drop them into a pan of boiling water. As soon as they come up to the surface, remove them with a slotted spoon.

5.StepBrown the mushrooms in olive oil, season and deglaze the pan with white wine. When the alcohol has evaporated add a little more water and allow it to reduce. Finally add some parsley and cream to enrich the sauce.
